Pellegrino is a traditional Italian annuum variety belonging to the Cayenne family, valued for its sharp yet balanced heat and reliable productivity. It is particularly well suited to Mediterranean and Asian-style cooking, offering a clean, bright heat that enhances rather than dominates a dish.
The pods are long, slender, and vibrant red when mature, typically reaching 10–15 cm in length. Their thin walls make them ideal for both fresh use and drying, while the smooth skin and uniform size contribute to an attractive, easy-to-harvest crop.
Flavour is bright and slightly earthy with a pronounced kick, comparable to classic cayenne types — around an 8 on a 1–10 scale, classed as Hot. When dried, the pods grind into a fine powder with a sharp, aromatic flavour well suited for sauces, seasoning blends, and infused oils. Used fresh, Pellegrino adds both heat and colour to pasta sauces, stir-fries, and grilled dishes.
