KS White Thai is a select Thai-type chilli bred by American grower Khang Starr, who’s known for refining open-pollinated Thai genetics into stable, high-yielding lines. This variety stands out for its cream-white pods that ripen to orange and finally bright red, offering the same bold heat and clean flavour as traditional Thai chillies but with a striking pale start.
Pods are slender, upright, and smooth-skinned, around 6–8 cm long, ripening from ivory white to orange and then glossy red. The flavour is bright, citrusy, and slightly earthy, carrying hot heat around 50,000–100,000 SHU, just like classic Thai Bird’s Eye types. Perfect for curries, stir-fries, and chilli oils, it delivers that distinct sharp, instant burn that defines Southeast Asian cuisine.
Plants are compact and highly productive (50–70 cm tall), producing clusters of upright pods that colour beautifully across the season. They’re well-suited to pots or open ground and thrive in warm, sunny conditions.
Seeds germinate best at 28–30 °C, sprouting within 10–21 days. Plants mature in about 90–100 days, fruiting heavily until late summer.
