Jalapeño White is a rare pale-fruited jalapeño variety bred in the USA for its striking creamy-white pods and bold, clean heat. It carries the full jalapeño flavour profile — grassy, crisp, and slightly smoky — but in a colour form unlike anything seen in traditional green or red types.
Pods are thick-walled, 7–9 cm long, ripening from light green to ivory-white, then finally to soft yellow and red at full maturity. Heat is medium–hot, typically around 8,000–10,000 SHU, with a sharp, fresh bite and subtle sweetness as the pods mature. The pale pods hold their colour beautifully when pickled or grilled, making this a favourite among collectors and artisan sauce makers.
Plants are medium-sized (60–80 cm tall), bushy and highly productive, bearing heavy sets of pods that develop colour gradually. Despite its ornamental beauty, Jalapeño White is a fully culinary variety, prized for flavour as much as appearance.
Seeds germinate best at 28–30 °C, sprouting in 10–21 days. Plants mature in about 90–100 days and crop steadily through summer under warm, bright conditions.
