CAP 872 is a baccatum accession collected in Bolivia as part of the Capsicum Accessions Programme. These numbered accessions are preserved for their genetic importance and represent the traditional diversity of South American chillies. CAP 872 is noted for its milder heat, making it more approachable than many other baccatums, while still carrying the classic fruity flavour of the type.
Pods are small to medium, elongated and slightly curved, ripening from green to orange-red. Heat is mild to medium, with a bright, fruity-citrus flavour that lends itself well to sauces and fresh salsas.
Plants are tall and vigorous, often over 1 m in height, producing heavily across a long season. The yellow-spotted white flowers typical of baccatums make them easy to identify.
Seeds germinate best at 26–30 °C, sprouting in 10–21 days. Plants usually need 90–110 days to first harvest, producing generously through summer.
