Jalapeño NuMex Vaquero is a high-yielding commercial jalapeño variety developed by the Chile Pepper Institute at New Mexico State University (NMSU). It was bred to give growers and processors a thicker, meatier pod with excellent flavour and consistent heat — the professional grower’s choice for quality and reliability.
Pods are large, smooth, and thick-walled, averaging 8–10 cm in length. They ripen from deep green to glossy red, maintaining firm texture and clean, crisp flavour at all stages. Heat is medium–hot, typically 8,000–10,000 SHU, with a pure jalapeño taste — fresh, grassy, and slightly smoky when fully ripe.
Plants are strong and upright (70–90 cm tall), producing heavy yields over a long season. The NuMex Vaquero line is known for its disease resistance, pod uniformity, and commercial-grade productivity, but it’s equally suited to home gardens where dependable crops are valued.
Seeds germinate best at 28–30 °C, sprouting within 10–21 days. Plants mature in about 90–100 days and produce well under both open-field and greenhouse conditions.
