NuMex Joe E. Parker is a classic New Mexican chilli developed by New Mexico State University (NMSU) and named after grower Joe E. Parker, who helped refine the line through years of field selection. It’s one of the best-known Anaheim-style varieties, prized for its large pods, reliable yields, and versatile mild heat — perfect for roasting, stuffing, or drying.
Pods are long and smooth, 15–20 cm in length, with thick flesh and excellent flavour. They ripen from green to bright red, offering mild to medium heat around 1,000–3,000 SHU. In New Mexico cuisine, they’re used both green (for roasting and rellenos) and red (for sauces and flakes). The flavour is sweet, earthy, and slightly tangy, capturing the true taste of the Southwest.
Plants are tall and productive (70–90 cm), producing uniform, high-yielding crops under warm, sunny conditions. The variety is well adapted to greenhouse or outdoor growing, performing reliably in both commercial and home gardens.
Seeds germinate best at 26–30 °C, sprouting within 10–21 days. Plants mature in about 90–100 days, yielding heavily throughout summer.
