Maris Biber is a classic Turkish chilli variety, grown for its long, smooth pods and gentle, aromatic heat. The name Biber simply means “pepper” in Turkish, while Maris refers to the regional type — a dependable, high-yielding chilli widely used in Turkish cuisine for grilling, stuffing, and drying.
Pods are long and slender, 15–20 cm in length, with a glossy skin and slightly curved shape. They ripen from light green to deep red, developing a sweet, mildly smoky flavour with mild to medium heat, usually around 3,000–8,000 SHU. When fresh, they’re often used for biber dolması (stuffed peppers), or roasted and served with olive oil and garlic. Dried, they add depth and colour to stews, kebabs, and spice blends.
Plants are upright and vigorous (60–80 cm tall), producing heavy yields throughout the season. Maris Biber thrives in warm, sunny conditions but adapts well to greenhouse or container growing in cooler climates.
Seeds germinate best at 28–30 °C, sprouting within 10–21 days. Plants mature in around 90–100 days and continue fruiting into early autumn.
