The Anaheim chilli is one of the most recognisable mild annuums, widely grown in California and across the USA. Its roots trace back to New Mexico, where it was developed from local varieties before being brought to Anaheim, California, in the late 19th century by Emilio Ortega. Since then, it has become a staple in American cooking, particularly for stuffing, roasting, and use in mild sauces.
Pods are long and tapered, typically 15–20 cm, ripening from green to red. They are usually eaten at the green stage, offering a mild flavour with gentle heat, though red-ripe pods develop a slightly sweeter profile. Their size makes them particularly suitable for stuffing (chile relleno) and grilling.
Plants are upright and productive, usually 60–90 cm tall, yielding large crops of long pods. They are reliable performers in a wide range of climates and are among the most popular mild chillies for growers.
Seeds germinate best at 25–28 °C, sprouting within 10–21 days. Plants take 75–95 days from sowing to harvest, producing continuously through the season.
