The Bicherry Amarillo is a South American baccatum variety named for its cherry-like shape and bright amarillo (yellow) colour. As with many ajís, it carries a fruity, tangy flavour and a steady medium heat that makes it versatile in the kitchen.
Pods are small and rounded, usually 2–3 cm across, ripening from green to a rich golden yellow. Their juicy flesh and zesty bite make them excellent for fresh salsas, pickling, and decorative use in dishes.
Plants are tall and upright, typically 90–120 cm, with a long growing season and strong yields of small, brightly coloured pods.
Seeds germinate best at 25–28 °C, sprouting within 10–21 days. Plants take 90–110 days from sowing to harvest, cropping reliably through the season. In the UK, greenhouse or polytunnel growing is recommended for best results.
