The Ají Omnicolor is a striking South American baccatum variety, valued as much for its ornamental beauty as for its flavour. The name reflects its unique ripening process, where pods pass through multiple colours — cream, yellow, orange, purple, and finally red — creating a rainbow effect across the plant.

Pods are small and slender, around 5–7 cm long, and carry a tangy, fruity flavour with medium heat. Their multi-coloured ripening makes them stand out in both gardens and kitchens, while still being versatile for fresh use, drying, or cooking.

Plants are compact to medium in size, typically 70–100 cm tall, with a spreading habit and high productivity. They are particularly eye-catching when grown in groups, where the full range of ripening colours is on display at once.

Seeds germinate best at 25–28 °C, usually sprouting in 10–21 days. Plants take 90–110 days from sowing to harvest, cropping steadily throughout the summer and autumn.
