The Ají Verde, meaning “Green Ají”, is a South American baccatum recognised in the USDA PI database under accession PI 290983. While many ajís ripen through multiple colours, this variety is particularly valued for its fresh use at the green stage, where it offers crisp, fruity flavour and balanced medium heat.
Pods are elongated, usually 6–9 cm long, ripening from green to red, though they are often harvested and enjoyed while still green. Their flavour is sharp, fresh, and tangy, making them excellent for salsas and cooking where a greener, less-sweet chilli note is desired.
Plants are tall and productive, typically 100–130 cm, with strong upright growth and a generous yield of pods throughout the season.
Seeds germinate best at 25–28 °C, sprouting within 10–21 days. Plants take 90–110 days from sowing to harvest. In the UK, greenhouse or polytunnel growing is recommended for consistent ripening, though green-pod harvests can be achieved outdoors in a warm summer.
