The Tabasco Greenleaf is a cultivated selection of the traditional Tabasco pepper, developed in the United States for improved disease resistance. It is closely associated with the original Tabasco strain used in sauce production, with “Greenleaf” referring to its resistance to tobacco etch virus.

Pods are small, slender, and upright, typically 3–5 cm in length. They ripen from pale green to yellow, then orange, and finally bright red. The fruits are juicy with thin walls and are well suited to sauces and fresh use.

Flavour is sharp, slightly fruity, and distinctive, with a clean, penetrating heat. Heat levels are typically in the 30,000–50,000 SHU range, placing it in the Hot category. It is widely used in sauces, including traditional pepper sauces.

Plants are vigorous and upright, often reaching 90–120 cm in height. They are highly productive, producing numerous upright pods over a long season. The Greenleaf strain shows improved resistance to common diseases compared to standard Tabasco types.

This variety was developed as part of agricultural improvement programmes to maintain the flavour profile of Tabasco peppers while enhancing field performance and disease resistance. It remains closely linked to commercial sauce production.
