The Tarahumara Chile Colorado is a traditional heirloom chilli from northern Mexico, associated with the Tarahumara (Rarámuri) people of the Copper Canyon region. It is a regional landrace valued for its culinary use in dried form, particularly in sauces and traditional dishes.
Pods are elongated and slightly tapered, typically medium-sized, and ripen from green to a deep red. The skin is relatively thin, making them well suited for drying, where they develop the characteristic “Colorado” (red) appearance used in Mexican cuisine.
Flavour is rich and earthy with mild heat, generally falling within the 1,000–5,000 SHU range, placing it in the Mild category. It is commonly used dried and rehydrated to produce red sauces, offering depth without overwhelming heat.
Plants are moderately sized and productive, adapted to warm, dry growing conditions. They produce a reliable yield of pods suitable for both fresh use and drying.
This variety holds cultural significance within the Tarahumara community, where it has been cultivated and used for generations. It forms part of the broader group of “Chile Colorado” types, referring to red, dried chillies used extensively in northern Mexican cooking.
