Dried Serrano Chillies, also known in parts of Mexico as Chile Balín, are the dried form of the well-known Serrano pepper (Capsicum annuum). Drying concentrates their flavour, producing a chilli with a rich, earthy character, moderate heat and a slightly fruity finish.
Traditionally used in Mexican cuisine, dried Serrano chillies are ideal for adding depth and warmth to sauces, stews, salsas and marinades. They can be used whole, broken into pieces or ground into chilli powder.

Dried Serrano chillies have a medium to hot heat level with an earthy, slightly smoky flavour created during the drying process. They retain some of the fresh Serrano's bright, grassy notes while developing a deeper, fuller taste that works well in both traditional and modern recipes.
