The Ají Norteño is a traditional Peruvian variety whose name translates to “Northern Ají”, reflecting its strong roots in the northern regions of Peru. In this part of the country, ajís are central to everyday cooking, and varieties like the Norteño carry the fruity flavour and medium heat that define much of Peruvian cuisine.
Pods are elongated and narrow, typically 7–10 cm long, ripening from green to a bright red. Their flavour is fruity and tangy with a reliable medium heat, ideal for sauces, stews, and fresh use in salsas.
Plants are vigorous and tall, often reaching 100–150 cm, and produce steady yields throughout the season. Their upright habit and long cropping make them a reliable choice for growers who want heritage flavour with dependable performance.
